AIP Mac and Cheese

Who doesn’t love macaroni and cheese, its not something that I crave all the time, but when the craving hits there isn’t anything thats gonna stop it. I have leveraged my fan favorite AIP Cheese Sauce and the new Cassava Penne from Jovial (A big thank you to Jovial for making AIP compliant Pasta!) It would be good as is, but I snuck in some broccoli and chicken and hid the whole lot under a pile of bacon just for good measure (*optional, obvs). Can’t have anyone in my house thinking this is healthy-ish or they might lose interest.


Ingredients

1 cup Cheese Sauce (make a big batch, then freeze in 1 cup portions for things like this!)

1/2 cup Broth

1 box Pasta

*2 cups frozen broccoli

*1 cup cubed cooked chicken breast (you can use that canned stuff lurking in your pantry, we’re in the middle of a freaking pandemic after all)

*1/4-1/3 cup crumbled bacon

Method

Par-boil the pasta to al dente. Combine Cheese Sauce and the broth, it will be a bit soupy. If you’re here for plain mac and cheese, you can stop here- dump in oven safe dish and bake in a 350f oven for 10-15 minutes . *If you’re going for a full meal, fold in chicken, broccoli and 1/2 of the bacon into the pasta, top with the remaining bacon crumbles and bake for 10-15 minutes until the top is just starting to get golden. Let cool for a few minutes so everything has a chance to set and thicken, and you don’t have to risk burning your mouth or eating like a dragon.
