Nightshade free Guacamole

When I first adopted the autoimmune protocol guacamole (and avocados in general) was a staple in our house, even more than it was before. I definitely missed spice, but found that a dab of wasabi or a shallot would provide enough “heat” to not miss the chilis or pepper too much. I detest food waste so this guacamole is chock-full of cilantro stems, they’re the most flavorful part anyway. Eat it with my tasty tortilla chips.

1 avocado, halved and crosshatched

1 small shallot, minced

1 tsp pink salt

1/4 cup cilantro, mostly stems, minced

1/2-1 lime, just the juice

Scoop out avocado cubes and combine in dish with remaining ingredients, combine until desired consistency.
