AIP Greek-style Meatballs

Quick and flavorful meatballs, juicy and bursting with traditional Greek seasonings. Excellent for meal prep and they freeze very well!

1 lemon, just the zest

1/4 cup + minced mint leaves

2 Tbsp fresh dill, minced

2 tsp pink salt (+pepper reintroduction)

1 large shallot minced (about half cup)

1 lb ground lamb + 1 lb ground pork or beef ( you can use only lamb, but using a blend of meat will leave you with less grease(smoke) and a still yummy lamb flavor that is mild enough for kids to enjoy without questions)

Combine everything but the meat in a large mixing bowl, let it macerate for a hot minute. Then add meats and get your hands in there. Try to get a homogenous mixture, but be careful not to over work it or they'll be tough.

Scoop by the tablespoon onto a sheet pan. With moistened hands roll into balls. Bake in a 350 degree oven for 15-20 mins. Enjoy the hell out of them, however you please. Great with rice or flatbread.
