AIP Freezer Friendly “Buttermilk” Waffles

Remember waffles? The crispy fluffy vessels for butter and syrup…yeah me neither. Its been a hot minute since I had anything that resembled a real waffle. I got burned out on trying all of the best AIP waffles only to have them fall flat in all their soggy shame. Sometimes I try to tweak an existing recipe until it suits my taste, but didn’t feel like I’d gotten anywhere and kind of gave up. Well that is, until recently when I just happened to blend the right mix of flours while trying to achieve something else (which was a total flop btw) but the super crisp drip off the pan got me thinking, lets try to waffle this, and the rest is history. These waffles, like a true buttermilk waffle, are super crisp on the outside, even after they’ve sat on the counter for a few minutes. They freeze excellently and come back to life in the toaster. Real food eggo’s, thats something I can get behind.

Fruit Crumble

Who doesn’t love a fruity and fragrant crisp? I love a warm crisp no matter what season; what better way to showcase the seasons finest, freshest, most flavorful fruits. You can even add garden surplus like rhubarb and herbs for some fun flavor combos. Added bonus, the topping and filling can be made ahead and frozen individually until you’re ready to assemble meaning you can drop it in the oven while you make dinner, and if you’re lucky you might have enough leftover for a few bites at breakfast. Gluten Free Bagels

What’s better than toasty bread? I’ll wait…That’s right, not much! These bagels are a hybrid between a traditional NY style bagel you’d find in a Jewish delicatessen and one of those over simplified weight watchers bagels that rose to Pinterest fame years ago. Honestly the closest thing I’ve had to AIP bread I’ve ever had. I’ve tried the mix and found the bagels to be on the flat side, and very doughy…maybe I’m just bad at directions, I dunno. They kind of scratched the itch, but not all the way.

Melted Cauliflower Pasta with Lemon and Capers

AIP Pumpkin Pie Filling

I am so stoked on how this turned out, it took a bit of relentless tweaking to get the custard to set just as I had remembered it, but I think I finally nailed it (I’m sorry that I’ve been sitting on this recipe for TWO YEARS thinking I had already published it. Insert facepalm here. Better late than never right?! If you’re missing pumpkin pie reminiscent of what grandma used to make I urge you to give this filling a try with your favorite crust. Its rich and silky, yet firm…all without the use of eggs, cream or refined sugar.
